Zucchini Cake Recipe - Chocolate, without butter and reduced sugar:
- 20 g unsweetened cocoa powder
- 30 g flour (or cornstarch)
- 40 g of stevia or 80 g of sugar
- 200 g of 50 or 70% chocolate
- 200 g grated zucchini
- 4 eggs
- Vanilla extract
- Preheat the oven to 180.
- Break the chocolate into small pieces and melt it for 2 minutes in the microwave.
- Peel the zucchini and grate it finely, collect 200g without draining it.
- Separate the egg whites from the egg yolks. Whisk the egg yolks with the sugar and vanilla.
- Add the cocoa powder, mix, add a little zucchini.
- Add the flour or cornstarch, then the melted chocolate cools, mixing well. (Don't put everything, keep 3 spoons of chocolate).
- Slip in the remaining zucchini - mix.
- Beat the egg whites firmly then add them to the mixture, lifting the dough well to keep the air bubbles out.
- Pour the mixture into a non-stick mold and bake for 30 minutes at 180 degrees.
- Put the remaining melted chocolate on the cake once it has cooled, smooth it out. Decorate the cake as you wish!
